1. They All Are Lactose Free
Fruits and vegetables are all lactose free in their natural state. The problem is that normally you don't eat them right out of the garden. Preparation frequently make the vegetables a poor choice if you are lactose intolerant. Lactose intolerance comes from the inability to digest lactose. That seems simple enough. Lactose is the sugar present in milk. Vegetables have no milk so as long as none is added you are home free.
2. Sneaky Salads
Sometimes you think you followed all the rules and you still get violent cramping, gas and diarrhea that come when you ingest milk. These are the times that thinking caps go on and there is a hunt over the list of foods that you ate. You ate just a salad and nothing more? Look harder. A hidden devil in salads is the dressing. Ranch dressing is one of the worst kind for those that are highly intolerant of lactose. Blue cheese, you say? Another real pain in the belly. Sometimes there is hidden cheese in the salad that you didn't think about when you ate it. Watch for all the parts when you order a salad and the rule of thumb is always choose a clear dressing.
3. Cook 'Em Up
Cooked vegetables are delicious. They are especially good if they're creamed, like creamed peas and potatoes. They are also terrible for the lactose intolerant. Any vegetables that you choose at home or dining out should not have a cream sauce. Cheese sauce may be great on broccoli but if you don't want the evening to end on a gassy note, leave the cheese off the vegetable. Some vegetables use lactose in processing. These are hidden enemies. Read all labels and ask questions. Many people differ in their tolerance of lactose and do not get sick from some forms of lactose. Yogurt and cottage cheese already have some of the lactose broken down. If you have some tolerance, a salad of cottage cheese and fruit is okay. If you aren't, don't put any into your system.
4. Battered, Buttered and Fried
Batter that coats those delicious fried vegetables create a problem for your system if they contain hidden lactose. Simple items that you don't equate with milk also cause havoc. The caramel on caramel apples can create a stir in the Netherlands of your body. Buttered vegetables have a bloating effect just as much to some as do creamed vegetables. Don't let the food trick you if you suffer from lactose intolerance. Watch everything and read labels. Sometimes lactose really hides from you.
