Food poisoning happens when you eat food contaminated by bacteria. Salmonella bacterium can contaminate raw beef, poultry, eggs or dairy products. Vegetables can be affected when washed with water contaminated by salmonella. E. coli can be found in undercooked meat, unpasteurized milk and apple juice, contaminated water and vegetables fertilized by cow manure. Other toxins can contaminate salads and salad dressings. Food handlers who do not practice proper hygiene can contaminate foods. Symptoms may occur hours or days after infection.
Nerve Dysfunction
Botulism is a serious form of food poisoning caused by preserved food contaminated with organisms. It can lead to weakness, blurred or double vision, paralyzed eye nerves, speaking or swallowing difficulties, paralysis that spreads throughout the body, respiratory failure and death, according to the University of Maryland Medical Center (UMMC). Mushroom poisoning can affect the neurological system and cause confusion or vision problems.
Nausea and Vomiting
Fatigue and a loss of appetite may develop. Vomiting for a period of more than two days or vomiting blood are indications that you should see a doctor, the Mayo Clinic warns. Medical treatment should also be sought if there is difficulty in keeping liquids down for 24 hours.
Abdominal Pains
Abdominal pains and stomach cramps are common signs of food poisoning. Mushroom poisoning can result in upset stomach and gastrointestinal problems. See a doctor if there is extreme or severe abdominal cramping.
Diarrhea
Bloody diarrhea can occur from salmonella contamination. E. coli poisoning can result in diarrhea with large amounts of blood and can occur up to three days after consuming contaminated food, the UMMC says. Watery diarrhea can also occur from food poisoning. Medical attention is needed whenever there is blood in bowel movements. A doctor should be seen when there is severe diarrhea that lasts for more than three days.
Fever
Salmonella infection can cause chills and fever. See a doctor if you have a temperature above 101.5, the Mayo Clinic advises. Headaches are sometimes present as well.
Organ Failure
Heart problems, kidney failure and liver damage can result from mushroom poisoning. It can lead to death if not treated immediately, the UMMC says.
Dehydration
Excessive diarrhea from salmonella poisoning can cause dehydration leading to excessive thirst, severe weakness and dizziness. Medical treatment for hydration is necessary.
