How to Fillet Gurnard

The gurnard is a saltwater fish that is a very close relative of the sea robin, and the two names are frequently used interchangeably. The gurnard inhabits the coastal waters of the Atlantic and Mediterranean Seas along the shores of Europe and is commonly eaten in those regions, although it is not a large target of commercial fishing. The large wing-like pectoral fins of the gurnard and sea robin are their distinguishing feature. The sea robin, which can be caught along the North American Atlantic shore, is filleted using the same method.
