Creamy Dreamy Asparagus Soup

One of my favorite winter meals is soup –  big bowls of it. Soup is hearty, warming and full of nutrition. My kids love eating soup, getting messy, and using a big spoon to slurp it all up.

Ingredients

1  bunch raw asparagus, ends trimmed
1 ripe avocado
1 cup coconut water
1 cup raw cashews
1/4 cup fresh dill
1 lemon, juiced
1 teaspoon tamari or soy sauce
2 cloves garlic
1/2 teaspoon fresh ground black pepper
1/2 teaspoon pink sea salt
1  ear fresh corn, kernels removed
Optional: 1 tablespoon Green Dream organic raw superfood powder

Directions
1. Add all ingredients except the corn to blender. If it's too much to fit at once, you can do it in two batches.
2. Blend until smooth and/or desired texture.
3. Warm on the stove top until it reaches desired temperature.
4. Top with fresh corn, a twist or two of black pepper and a sprinkling of sea salt.

Thai Dream Pasta Sauce
If you’d like to easily see the full nutritional information for this recipe, here is the link to view them in MyPlate, LIVESTRONG’s free calorie tracker.

Here’s a Thai sauce that is incredibly healing during the months when we all get colds and flu.

Ingredients
1 cup almond butter
1/2 cup coconut milk
1 teaspoon ground tamarind
1 teaspoon  ginger
1 teaspoon chili flakes
2 cloves of garlic
1 teaspoon  Nama Shoyu (Use Tamari for gluten free)
1 lime, juiced
Optional: 2 teaspoon Green Dream organic raw superfood powder

Directions
1. Put all ingredients in a blender, and blend until it reaches a creamy consistency.
2. Enjoy with pasta

Cacao Magic Truffles

One of the hardest things for most people is staying healthy on the go. My secret weapon is making bars or truffles to keep you going all day strong. I keep them in my purse and in the car for whenever the kids or I get hungry in between meals.

Ingredients
2 tablespoons to 1/2 cup Cacao Magic powder (depending on how "chocolatey" you want them)
4 Medjool dates
1/2 cup almond meal
1-2 tablespoons Green Dream organic raw superfood powder
4-5 drops chocolate stevia
4 tablespoons coconut oil
1 teaspoon peppermint extract (more if you want more)
raw cacao nibs and/or unsweetened coconut flakes for coating

Directions
1.Melt the coconut oil so it's completely liquid.
2. In a food processor, mix the dates and almond meal.
3. Add half the coconut oil, Green Dream powder, and Cacao Magic powder. Process until it's not powdery; add a few drops of coconut oil if it is.
4. Add the rest of the coconut oil, peppermint extract and stevia and process until it's a smooth thick consistency. If it's too powdery, add more coconut oil.
5. When you get the desired consistency, take out of the food processor.
6. Shape little balls with your hands to make truffles and put into fridge over night or the freezer for one hour. Or, press the mixture flat into the bottom of a pan to cut after freezing .

Note: I usually add additional toppings before step 6, like goji berries or coconut flakes, for added texture.

Hot Chocolate

Lastly, it’s not winter without hot chocolate. Satisfy your sweet tooth and get healthy all at once with this delicious treat.

Ingredients
2 oz hot water
4 oz almond or coconut milk
1 tablespoon Cacao Magic anti-inflammatory powder
1 teaspoon cinnamon
1 tablespoon coconut oil
2 drops chocolate stevia
splash of vanilla extract

Directions
1. Mix all ingredients, warm up and enjoy.
