Salmon Burgers!!

My new latest obsession! These I made with spinach and feta! I also make them with cheddar and jalapeno. Use your imagination!

Here is the ingredient list…just put it all in a food processor – form into patties and broil.

  • 1 pound salmon – bones and skin removed
  • 1 Tbsp mustard – Dijon
  • 1/8 cup egg whites
  • 1 tablespoon lemon juice
  • 1/2 cup spinach
  • 1/3 cup feta cheese
  • Red Pepper flakes to your liking
  • 2 scallions, chopped
