Allicin is an organic compound found in garlic. When garlic cloves are crushed, allicin is produced by a chemical reaction. Allicin is garlic's most biologically active compound, which also provides its characteristic odor. Scientists at University of Maryland Medical Center, or UMMC, believe allicin is responsible for most of the healthful properties of garlic.
