spaghetti squash leftovers
I roasted some spaghetti squash earlier this week and the hub was unimpressed. I still have tons of the stuff, plus, I still have a raw squash. The local sams club had 2-packs dirt cheap. I will roast the other squash the next time I do a pasta meal. In the meantime, I have plenty of leftovers.
I will never make fritters out of spaghetti squash again. They were ok, not great.
Pretty good in veggie omelets, with spinach, onion, mushroom, sharp cheddar.
Any other, better ideas?

I've made pizza crust out of leftover cooked spaghetti squash. Mix with some grated mozzarella cheese, an egg, and some italian seasonings. Bake for awhile on its own before adding toppings. Better than pasta meal which I have also tried. Good luck!

I just did this casserole. It is yummy! Spag squash, diced tomato or marinaras, sausage cut up. You could put peppers etc. shredded cheese on top.

This one is the diced tomato, other one was marinara with ground turkey

Ah oh no, fritters sound like they would've been good. Why did you not like them?

I made the casserole, it was really good.
Regarding the fritters, I might've just chosen the wrong recipe. It browned, but was pretty wet and never really formed a good crust. The next time, if there is a next time, I will not use egg and might throw in a little parm or cheddar to bind.
