spaghetti squash leftovers

I roasted some spaghetti squash earlier this week and the hub was unimpressed. I still have tons of the stuff, plus, I still have a raw squash. The local sams club had 2-packs dirt cheap. I will roast the other squash the next time I do a pasta meal. In the meantime, I have plenty of leftovers.

I will never make fritters out of spaghetti squash again. They were ok, not great.
Pretty good in veggie omelets, with spinach, onion, mushroom, sharp cheddar.
Any other, better ideas?
