1 apple for breakfast, 1 ear of sweet corn on the cob, 1/4 cucumber and 6 baby carrots included in the healthy meal I made for lunch(these were my servings)

Saturday I tried a recipe I found on here. Looked simple enough, but it took me nearly 3 hours. Not worth the effort and time, but it had lots of eggplant and peppers. It was really good but 3 hours? Never again. Glad I tried it anyway.

I discovered today I like pickled beets better if I put balsamic vinegar on them. Tried that on the cherry tomatoes, too.

Only 3 servings of fruit today: pineapple, apple; orange.. :-( Starting goal is to eat a fruit or vegetable each time I eat. Missed it for my afternoon snack and dinner. Have to admit that by dinner, I just didn't care. But will keep at it tomorrow. Overall goal is to eat 6 to 8 servings of fruits and veggies daily.

Iceberg lettuce salad for dinner yesterday. I definitely prefer baby spinach, but they don't usually have that at bars. :( Today I have frozen veggies and turkey burger for lunch. Planning to grill some peppers and onions with dinner tonight. I'm guessing that would be around 5-6 servings of veggies.

Lots of frozen mixed veggies at dinner last night. I know they're not as good as raw, but they're still better than canned, right? Grilled chicken salad coming up for dinner tonight.
