How to Mill Your Own Grains for Bread or Cereal

Milling your own grains ensures that you will have fresh, whole-grain flour for baking. The more expensive mills are often very durable and can last for your lifetime, according to Sue Gregg, author of “Introducing Whole Foods Cooking.” Gregg says that milling is convenient and improves both the nutrition and the flavor of your home-baked foods. She notes that home milling increases your flour options, as you can custom blend flours or mill unusual grains such as spelt or kamut that are not readily available as flour in stores.
