There was a time when this was a challenge, much like the new "healthy in a hurry lunch" challenge. Sure would be nice if LS admin could just pick a winner since that is why all of these submissions were posted.

Need a Quick Meal

I work all day at work anywhere from 9-10 hour days, I get home at 6p.m. and the kids are straving and the husband well is no help at all. I need a fast 2-3 ingred. meal. Any ideas?? I love to BROIL pork because it only take 8 minutes till it is done. I tried to make yummier items, but the prep work is 30 min and then cooking time is always 30-1 hour and that is way too long.

 Have you ever tried making something the night before and serving it the next day?  I make a turkey chili and also a black bean soup and they are always better the next day so I will sometimes cook it later at night one night, store it in the fridge in some tupperware and then the next day it's an easy dinner to just take out and reheat in the microwave.  
Also, fish is usually a really easy, quick meal.  It doesn't take long to broil the fish and while the fish is broiling you can mix up some salsa and serve it on top of the fish.  Real quick and easy that way or if you have some extra time, I usually try to mix up a salsa or spread while the broiler is heating and cook it on top of the fish.  Same thing can be done with chicken.

 I know that sometimes it doesn't feel like "cooking" but I would totally recommend a crockpot dish and then doing the prep work for sides in the morning before you leave.  Yes, it adds an extra 30 minutes to the morning routine, but it is soooo great having food hot and ready when you walk in the door.  I also do a lot of slow cook roasts, but you need an oven or roaster that will shut off automatically.  Put a ham, pork roast or beef roast on for 20 miutes per pound at 325F.  If you add potatoes or pineapple or whatever then some of your veggies are done at the same time.  It's also a good idea to buy fresh fruit and veggies twice a week and get them chopped up and stacked in tupperware with a paper towel on the bottom to absorb moisture.  It takes 2 minutes to make a salad this way.  :)!  I also recommend getting a snack tray and fillng it with appetizers that the kids can eat before you get there...carrot sticks, cheese, crackers, grapes, etc.  I always say if the snack tray is still full then you technically aren't starving.  :)!  Anything, not eaten can go in tomorrow's lunch boxes.  My final thought is a bread maker that can be set to begin 4 hours before you get home.  Throw in all the ingredients and there is fresh bread to add to the meal as well.  It's so hard to work full time and then have the whole family stare at you when you step in the door...and it always comes down to more prep work for mom, but it is sooo worth it during the week.  Best wishes!

Vegeable Pulav

Vegetable Pulav

 

In pulav rice is cooked along with spices and meat and or vegetables so that rice absorbs the flavour of spices and all the water added to dish is absorbed by the rice. This healthy dish is nutritious and can be made in jiffy for the days when you are in hurry. It freezes well so if you want to store leftover its good option.

 


Serves - 4 Time - 30 Minutes

Ingredients

Olive oil 2 Tbsp

Sliced onion ½ cup

Tomatoes 1 cup

Green beans ½ cup chopped

Carrots sliced ½ cup

Peas shelled ¼ cup

Basmati rice 1 cup

Star anise 2-3

Cloves 4-5

Whole peppercorns ½ tsp

Bay leaves 2

Garam masala powder

Salt ½ tsp

Red chili peppers ½ tsp

 

Directions

Heat oil in a deep pan.Add cumin seeds and when they begin to splutter, add rest of the whole spices like bay leaf, cloves star anise, peppercorns etc, add sliced  onion and let them cook till they get even brown color.Now add tomatoes and cook them till they are evenly mashed, and add all other chopped veggies and sauté them till they are well coated with masala paste.Add salt and red chilli powder, garam masala powder and mix. Drain the rice out of water and add rice and 2 cups of water. Cover and cook for 10 minutes or so till rice are cooked and grain is separate.

Pecan Crusted Chicken with a Tang

Picked this recipe up from a friend!
2 4oz. chicken breasts 
1/2 cup Spicy Brown Mustard
1 Tbsp honey
1/4 cup finely chopped pecans          
 
Preheat oven to 350.  Mix the brown mustard and the honey together in a bowl. Brush the mustard mixture on the chicken (both sides) and then cover with the chopped pecan.  Place chicken in oven friendly baking dish and bake for 45 minutes.  Serve with a nice salad and it's a nice, quick, and easy dinner.

I can't even tell you how often I make this. It takes 10 minutes and is crazy delicious! Using cauliflower instead of rice is a trick I picked up from raw cuisine. Nothing raw about this dish, but it doesn't take long to cook.

My Crepes recipe

 French Crepes Prenez une tasse d'oeuf liquide pur, mélangez deux cuillères de poudre de protéine de glace cappuccino, et vous mélangez le tou et vous avais une recette pour faire des crêpes, Ajouter des fruits ... essayer c'est bon!Take one cup of pure liquid egg ,mix two scoops of ice cappuccino protein powder, you gate crepes mix, Add fruit on top ..try that is good !

Skillet Chorizo Stuffed Banana Peppers
