Connect with LIVESTRONG.COM Woman Explore: http://www.livestrong.com/woman/ Like: https://www.facebook.com/livestrongcom Follow: http://twitter.com/LIVESTRONG_COM/ More Jennifer: http://skinnychef.com, http://www.youtube.com/user/JenniferIserloh ***** Huevos Rancheros Serves 4 1 tablespoon olive oil 1 link fresh chorizo, chopped 1 red onion, chopped 1 can reduced sodium black beans, well rinsed and drained ½ cup water 6 oz. baby spinach 4 eggs 4 teaspoons hot sauce Heat a large skillet over high heat. Add the olive oil. Add the onion and the chorizo and cook 3 to 4 minutes, stirring often until the onions become soft and the chorizo is fragrant. Add the beans and cook 1 minute more, mashing them with the back of a spoon. Add the water and stir. Cook about 1 minute more, until half of the liquid evaporates, and a sauce forms. Add the spinach and press it down to help it wilt, cooking for about 30 seconds. Crack the eggs and place around the inside of the skillet. Cover and reduce the heat to low. Let the eggs steam for about 1 minute, until the whites are cooked through but the yolk is still soft. Spoon the egg and bean mixture onto four plates and top with hot sauce if using. Serve immediately.
