Connect with LIVESTRONG.COM Woman Explore: http://www.livestrong.com/woman/ Like: https://www.facebook.com/livestrongcom Follow: http://twitter.com/LIVESTRONG_COM/ More Jennifer: http://skinnychef.com, http://www.youtube.com/user/JenniferIserloh ***** Chocolate Mousse Serves 6 5 ounces dark, semi-sweet chocolate, chopped 3 tablespoons of trans-fat free margarine 5 room temperature eggs, separated, whites placed into a large, clean mixing bowl 1/2 teaspoon of salt 2 tablespoons confectioner's sugar Place the chocolate and margarine in a heavy small saucepan over low heat. Cook 1 to 2 minutes, stirring often until the chocolate melts. Turn the heat off and stir in the egg yolks until very smooth. Add the confectioner's sugar and stir until smooth. Set aside. Place the egg whites and the salt in a standing mixer or large bowl. Using the whisk attachment to the standing mixer or an electric mixer, beat the egg whites on high about 1 minute until stiff peaks form and egg whites cling to the side of the bowl when tilted. Fold egg whites into cool chocolate mixture, making sure not to crush the egg whites. Spoon into six parfait cups, ramekins, or 6 cup dish. Cover with plastic wrap and chill at least two hours or overnight.
