Connect with LIVESTRONG.COM Woman Explore: http://www.livestrong.com/woman/ Like: https://www.facebook.com/livestrongcom Follow: http://twitter.com/LIVESTRONG_COM/ More Jennifer: http://skinnychef.com, http://www.youtube.com/user/JenniferIserloh ***** Chevre Chaud Salad (Hot Goat Cheese Salad) Serves 4 Dressing: ¼ cup olive oil 2 tablespoons sherry vinegar 1 teaspoon Dijon mustard ¼ teaspoon salt ¼ teaspoon freshly ground black pepper ½ pound baby spinach ½ pound arugula 4 small fresh "button shaped" goat cheeses ½ cup panko breadcrumbs 4 teaspoons olive oil Place the ¼ cup of olive oil, vinegar, mustard, salt, and pepper in a blender or mini chopper. Place the greens in a large bowl and toss with the dressing. Spread the greens out on a large platter. Set aside. Place the breadcrumbs on a sheet of wax paper or aluminum foil. Press the goat cheese into the breadcrumbs. Heat a small skillet over medium high heat. Add 2 teaspoons of olive oil. Add the goat cheese and cook about 1 minute until the breadcrumbs brown. Add the remaining oil and turn the cheese. Brown for an additional minute. Transfer on top of the salad and serve immediately.
