This is the week of the EggPlant challenge. From out the clear blue sky my niece asked me for an eggplant recipe as well. I happen to have exactly one eggplant recipe to share with the world. I must confess that Eggplant is not my favorite but... meh...
Shrimp Eggplant Pomodoro Time 45 minutes Serves 5
1/2 lb Cooked Shrimp 1 lb Eggplant [medium] 1 cup Turnips 1/2 cup Celery, raw, diced 1 Jalapeno Pepper 1/2 cup Onions, Diced 3 cloves Garlic Clove 15 oz Canned Tomatoes, Diced 2 tbsp Tomatoes Paste 1 cup Tomato & Basil Sauce 1/2 cup Basil, Fresh 1 tspThyme, Fresh 16 Large Pitted Black Olives 2 tbsp Olive Oil 1 tbsp Tarragon, fresh How to make it Prepare the eggplant by peeling, salting and letting it rest for about 30 minutes to sweat out some of the moisture. Cube the eggplant and peeled turnips to be equal size. Heat olive oil in a large skillet and saute the eggplant and turnip cubes until nicely softened. Then add the celery, jalapeno, onion and garlic to combine flavors. Using some of the liquid from the canned tomato whisk the tomatoe paste to thin it then add the canned diced tomato with liquid, tomato paste and tomato sauce to the skillet and let simmer for 15 minutes to reduce the liquid. Finish off by tossing in the fresh basil, tarragon, thyme, sliced black olives and cooked shrimp. Let flavors combine for five minutes or so on the heat and plate it up. “ I subscribe to a local CSA (community supported agriculture) farm called Shaolin Gardens. Last weekend I got a wonderful haul of Swiss chard, celery, onion and zucchini. I used those to fix up a hearty stew which came out really well. I look forward to getting the surprise bounty baskets but it does keep you cooking so the produce doesn't go to waste.

“I just went to amend one of my recipes posted on Livestrong and found that the ingredients section is broken. Is it just me or is that happening to any of you as well?
Click edit and go to the ingredient area and all the ingredients are gone and I'm not able to add any. Without that you can't save any other modifications like adding a picture.”
