Tarragon adds an earthy flavor to this salad, while the ginger brings in the right amount of spice. You’ll top the salad with a drizzle of honey to balance out the savory flavors. To ensure that your celery is free of strings, simply run a vegetable peeler along the back of the celery to take off a thin layer.

1. Place the squash into a steamer basket in a pot with an inch or two of water in it and steam until soft. Approximately 10 minutes, depending on the size.
2. Take the squash out and let cool.
3. While the squash cools, mix the oil, vinegar, tarragon, honey, ginger, salt and pepper in a bowl.
4. Mix the squash, beans, celery and serve in a bowl or on a plate with greens.
5. Top or toss with the dressing.
