Move over, potatoes! We’re making hash with acorn squash. Simply shred the squash with a sharp mandolin or grater and mix it with diced onions. Add the hash to a pan and cook until lightly browned. Enjoy it as a breakfast side dish, or throw it in a wrap for brunch.

1. Shred the squash and mix with onion.
2. Heat a pan over medium heat and add the oil.
3. Add the squash and onion and let cook for several minutes.
4. Sprinkle in sea salt and pepper and turn the hash over, cooking for several more minutes or until some of the hash turns brown.
