Acorn Squash Hash

Acorn Squash Hash

Move over, potatoes! We’re making hash with acorn squash. Simply shred the squash with a sharp mandolin or grater and mix it with diced onions. Add the hash to a pan and cook until lightly browned. Enjoy it as a breakfast side dish, or throw it in a wrap for brunch.

INGREDIENTS

SERVES 4

  • 1 Whole Acorn Squash
  • 1 Yellow Onion (medium)
  • 1 tbsp Coconut Oil
  • 1/8 tsp Sea Salt
  • 1/8 tsp Ground Black Pepper

DIRECTIONS

1 Shred the squash and mix with onion.
2 Heat a pan over medium heat and add the oil.
3 Add the squash and onion and let cook for several minutes.
4 Sprinkle in sea salt and pepper and turn the hash over, cooking for several more minutes or until some of the hash turns brown.
