Warm Acorn Squash and Quinoa Salad

This gluten-free salad is a complete meal packed into a single dish. Its star ingredients include fiber-filled quinoa, potassium-rich avocado and, of course, our beloved acorn squash. If you happen to be out of avocado, feel free to sub in approximately a quarter-cup of olive oil to create the same rich flavor.

INGREDIENTS

SERVES 4

  • 1 Whole Acorn Squash
  • 2 medium raw carrots
  • 1 cup Quinoa
  • 2 cups Water, tap, well
  • 2 tbsp Onion
  • 2 tbsp Parsley
  • 1/8 tsp Sea Salt
  • 1/8 tsp Ground Black Pepper
  • 1 fruit without Avocados, raw, California
  • 1 garlic clove
  • 2 tbsp Apple Cider Vinegar
  • 1 1/2 tbsp Lemon Juice

DIRECTIONS

1 Place the rinsed quinoa, water, onion, carrots, and squash chunks into a pot.
2 Heat until boiling and then turn down the heat to a simmer, as a pinch of sea salt, and put on the lid.
3 Cook for 20 minutes, or until all of the liquid has been absorbed.
4 While the quinoa and vegetables cook, place the garlic, avocado, vinegar, lemon juice, with salt and pepper to taste, into a blender and blend until smooth.
5 When the quinoa is finished cooking, mix in the parsley.
6 Mix in the dressing.
