This sweet and savory soup bursts with blended acorn squash, green apples and lightly sauteed onions. We used a store-bought vegetable broth for speed and ease, but feel free to swap in your favorite broth. Before serving, sprinkle on some nutmeg to enhance the flavors of this creamy soup.

Directions

1. Place the oil into a saucepan over medium heat.
2. Add the onion and sauté for a couple of minutes.
3. Add the squash and apple chunks, then cover with the broth.
4. Bring to a boil, add the salt and simmer with the lid on, turning down the heat, until the ingredients are tender – about 10 minutes.
5. Let the soup cool for a few minutes, then blend.
6. Sprinkle nutmeg on top of each bowl.
