Ingredients:

2 tablespoons sliced almonds, toasted
1 cup traditional or whole-wheat couscous
8oz chicken breast, cooked
1/3 cup dried apricots, finely chopped
1/4 cup black olives, pitted and chopped
2 tablespoons olive oil
3 tablespoons lemon juice
2 tablespoons fresh Italian parsley, minced
3/4 teaspoon ground cumin
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 oz fat-free feta cheese, crumbled


Directions:

Bring 1 1/2 cups water to a boil in a medium saucepan. Stir in the couscous; remove from heat. Cover and let stand for 5minutes. Pour the couscous into a large serving bowl and fluff with a fork. Stir in the chicken, adding pepper you stir. Add more spices as desired. Sprinkle with almonds. Serve at room temperature.

Makes 6 servings
