All You Ever Wanted in a Couscous Salad

Besides being full of protein, fiber, and healthy fats, this creative couscous salad also very tasty, says Amy S. Margulies, RD for Retrofitme.com.

INGREDIENTS

SERVES 6

  • 2 tbsp Toasted Almond
  • 1 cup Couscous
  • 8 oz Chicken Breast
  • 1/3 cup Dried Apricots
  • 1/4 cup Pitted Black Olives
  • 3 tbsp Lemon Juice
  • 2 tbsp Parsley
  • 3/4 tsp Ground Cumin
  • 1/4 tsp Kosher Salt
  • 1/2 tsp Ground Black Pepper
  • 2 oz Fat Free Feta

DIRECTIONS

1 Ingredients:
2 tablespoons sliced almonds, toasted
3 cup traditional or whole-wheat couscous
4 oz chicken breast, cooked
5 /3 cup dried apricots, finely chopped
6 /4 cup black olives, pitted and chopped
7 tablespoons olive oil
8 tablespoons lemon juice
9 tablespoons fresh Italian parsley, minced
10 /4 teaspoon ground cumin
11 /4 teaspoon kosher salt
12 /2 teaspoon freshly ground black pepper
13 oz fat-free feta cheese, crumbled
14 Directions:
15 Bring 1 1/2 cups water to a boil in a medium saucepan. Stir in the couscous; remove from heat. Cover and let stand for 5minutes. Pour the couscous into a large serving bowl and fluff with a fork. Stir in the chicken, adding pepper you stir. Add more spices as desired. Sprinkle with almonds. Serve at room temperature.
