Amazing Curry

I typed in Chicken Curry to Google and found a version of this recipe, it's comfort food, and taste great!
Ingredients
- 16 oz Chicken Breast
- 2 tbsp Extra Virgin Olive Oil
- 2 cups Light Coconut Milk
- 1 container Greek Plain Yogurt
- 1 Onion, Medium - Cooked
- 4 cups Cauliflour
- 3 Russet Potato **
- 1 cup baby carrots
- 5 clove Garlic
- 1/2 tsp Fresh Ginger Root
- 1 tbsp Tomatoes Paste
- 6 tsp Garam Masala Spice
- 2 tsp Cumin Seeds
- 1 tbsp Bay Leaf
- 1 tbsp Paprika
- 1 tsp Cinnamon, Ground
- 1 tsp Sugar*
Directions
Mix all dry ingredients together + 1 tbsp Tumric
Dice Chicken Breast to small pieces and then combine the following in a large bowl with chicken and let marinate in the fridge for 1-3 hours (Veggies go in while cooking).

Tomato Paste
1 Cup Coconut Milk
Greek Yogurt
Chop onion
Prep Veggies into small pieces
1. Cook onion in olive oil, until they have color
2. Add in dry ingredients and cook for 2-3 minutes
3. Add Wet Mix and mix with onion and spices, and stir cook for 10 minutes
4. Add veggies and continue to cook for 20-30 minutes into; potatoes are tender. Add other cup of coconut milk for consistency as the dish cooks. More coconut milk makes a smoother curry.
5. Follow cooking instructions for the rice of your choice (Brown Basmati is good)
6. Enjoy.
