Aniseedy Cabbage Soup

Soothing Soup. Good for digestive conditions. The anise and fennel add a subtle spice to it. This could easily be made vegan with olive oil instead of butter.
Ingredients
- 1 1/2 cups Cabbage, Green
- 1 cup Fennel
- 1 cup Carrots
- 3/4 cup potato
- 1 oz Butter
- 2 tsp Anise Seed
- 1 tbsp Mild Miso Soybean Paste
- 4 cups Homemade Vegetable Broth
Directions
Chop all veggies into small pieces, melt butter/oil at the bottom of the pan and add all of the ingredients including the aniseed. Cook slowly, turning occasionally for about 10 minutes or until veggies begin to reduce in size.
Add two pints of broth bring to a boil and simmer for another 20 minutes or until cooked. Add miso, stir well. Partially liquidise to desired blend.
