Anjou pear may sound fancy, but it’s actually a commonly available pear. Here's the trick to knowing when it's ripe: gently press the pear’s neck using your thumb, and when it yields to that pressure, it's ready to go! The pomegranate juice gives this dressing it's natural peach color and has more antioxidant potency than an equivalent amount of acai juice or red wine.

Directions

1. Core the pear; keep on the skin. (Note: Anjou pear can be substituted with Bartlett or Comice pears. Do not use Bosc or Seckel pears.)
2. Add all ingredients to a blender. Cover and puree on high speed.
3. Use immediately or store in a sealed jar in the refrigerator for 3 to 4 days.
