Directions

1. Stir together the goat cheese and yogurt in a small bowl until smooth.
2. Core the Gala (or other red) apple. Cut the cored apple crosswise into 8 slices.
3. Spread the goat cheese mixture on top of each apple slice like frosting.
4. Sprinkle with the pistachios, pepper, and honey (or coconut nectar).

(HINT: Pick salt & pepper pistachios; then you can skip the added pepper since the pepper is already built in!)
