1. Core the small Jonathan (or other red) apple. Cut the apple in half lengthwise, then ut crosswise into extra-thin slices.

2. Lay the tortillas on a large cutting board. Spritz one side of the tortillas with cooking spray. Flip over 2 tortillas. Top these tortillas with half of the cheese, all of the apple slices, thyme, salt, pepper, and the remaining cheese. Top with the other two tortillas, sprayed side up.

3. Heat a medium or large (PFOA-free) skillet over medium-high. One at a time, cook the quesadillas until toasted and cheese is melted, about 1 1/2 minutes per side.

4. Cut each quesadilla into 6 wedges. Serve with the mustard on the side.
