Artichoke and Hearts of Palm Salad

Light Salad with a lot of flavor !
Ingredients
- 1 cup Quartered Artichoke Hearts
- 1 cup Hearts Of Palm, Canned
- 1/2 cup Red Onion
- 2 sprigs Cilantro, Fresh
- 1 tsp Sea Salt
- 1 tsp Spices, Pepper, Black
- 3 tbsp Raw, Unfiltered Apple Cider Vinegar
- 1 California Avocado
- 1 cup Bibb Lettuce
- 4 oz Shrimp, Boiled
- 5 oz Grilled Chicken
- 2 oz Tuna (in Water)
- 1 cup English Cucumbers
Directions
Drain cans of hearts of palm and artichoke. Dice hearts of palm, artichoke,onion and avocado. Slice cucumber and put all ingredients except for bibb lettuce leaves into large bowl and mix well making sure not to break up avocado too much. The vinegar will help the avocado not to turn brown too quickly and gives the salad a fresh, light taste. Take bibb leaves into the hand forming a'bowl'and fill with mixture, serve chilled. For a spicier version you can add diced poblano or jalapeno peppers minus seeds and veins to taste. You can also add chicken, shrimp or tuna on top for a protein but these are optional. Also, add cherry tomatos, green or black olives etc. if you like but make sure you make the calorie differences. Also, make sure you multiply the amount of protein per person as this recipe only states for 1 serving.
