Ingredients

Directions

1. In a large bowl, whisk together the oil, 1 1/2 tablespoons of the vinegar, the salt and pepper. Add the arugula and onion and toss well to combine.

2. In small bowl, gently toss together the avocado with the remaining 1/2 tablespoon vinegar.

3. Arrange the salad in a serving bowl or individual bowls. Top with the avocado and pomegranate arils (seeds). Sprinkle with additional salt and pepper to taste, if desired.
