Ashley's Italian Stuffed Chicken Breasts

Italian Stuffed Chicken Breasts
Ingredients
- 24 oz Boneless, Skinless Chicken Breast
- 3 cups Unseasoned Stuffing Cubes
- 1 1/2 cups Spinach, Raw
- 1/2 Tomatoes
- 1/3 cup Shredded Mozarella
- 1/3 cup Parmesan Cheese-grated
- 1 1/2 tbsp Italian Seasoning
- 1/5 tbsp Garlic Powder 2.9 oz
- 1/4 cup Mayo With Olive Oil
- 1 1/2 tbsp Extra Virgin Olive Oil
Directions
Preheat oven to 400 degrees.
Thaw chicken breasts (about 3 large).
Crush stuffing cubes. Chop spinach and tomatoes and mix into stuffing. Add cheeses and stir well. Add italian seasoning and garlic powder and stir well. Lastly, mix in mayo with olive oil well and press down into bowl to ensure well absorption. Split stuffing mixture into three even portions.
Lay out each chicken breast on a large piece of plastic wrap (spray both sides of wrap with Pam for easier spreading), and pull wrap back over breast. Pound as flat as possible without tearing.
Spray a 8"x8" pan (glass is what I use) and set aside.
Take one portion of stuffing mix and make into a tight ball with your hands. Put at one end of flattened chicken breast and roll up - then place in pan. Do this for each breast. The breasts should be touching in pan to hold each other together.
Lightly brush with EVOO before putting in oven.
Bake for 35 minutes.
