Directions

Bring water to a boil. Cook noodles. Drain, toss with canola oil and set aside.

In large bowl combine cilantro, soy sauce, lemon juice, garlic, ginger, oil, peanut butter and red pepper flakes. Stir until blended.

As cucumbers, snow peas, bell peppers, pineapple chunks and noodles to mixture and toss. Let stand, covered at room temp for 1 hr. Stir occasionally so flavors soak in veggies and pineapple.
