Asian-Style Oatmeal With Egg, Scallions and Tamari

You’ll prepare steel-cut oats in a highly aromatic scallion-ginger broth, then top with boiled eggs, sesame seeds and more scallions. Recipe and image courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 2

  • 3 cups low-sodium vegetable broth
  • 4 stalk scallion(s)
  • 2 tsp Ginger Root
  • 1/4 tsp sea salt
  • 3/4 cup Oats, Steel Cut
  • 2 Cage Free Hard-Boiled Eggs
  • 2 tsp Tamari Soy Sauce
  • 1 tsp Black Sesame Seeds

DIRECTIONS

1 Bring the broth, three-quarters of the scallions, the ginger, and salt to a boil in a medium saucepan. Add the steel-cut oats and bring back to a boil. Reduce heat to medium-low and simmer uncovered, stirring occasionally, until fully cooked, about 20 minutes.
2 Transfer to bowls, top with the boiled eggs, and sprinkle with the tamari, sesame seeds, and remaining scallions. Serve with additional tamari on the side, if desired.
