Asparagus Frittata - Sarah

Asparagus, eggs and cheese. Good for a low carb diet.
Ingredients
- 2 tsp Extra Virgin Olive Oil
- 1/4 tsp Coarse Kosher Salt
- 1 lb Fresh_asparagus
- 4 Eggs - Large Grade A
- 1 cup Swiss Cheese
Directions
1. Heat olive oil in a 10 inch oven proof pan over medium high heat.
2. Pre-heat oven broiler.
3. Add asparagus (cut in 1 inch pieces), reduce heat to medium-low, cover, and cook until the asparagus are barely tender (6-8 minutes).
4. Pour in eggs and cook until almost set, but still runny on top...about 2 minutes.
5. Sprinkle cheese over eggs and put in oven to broil until cheese is melted and browned, about 3-4 minutes.
6. Remove from oven with mits and slide frittata onto a serving plate. Cut into wedges.
