Asparagus Salad

A light flavorful salad that compliments well with chicken or fish.
Ingredients
- 24 stalks Asparagus
- 1/2 cup Red Onion
- 250 ml Red Wine Vinegar
- 1 tbsp Extra Virgin Olive Oil
- 4 tbsp Pecorino Romano
Directions
Chop the asparagus into thin slices. Dice the Red Onion. Mix all ingredients in a bowl. Marinate for at least 4 hours. Stir occasionally. Serve chilled.
