TWL 30 minute White Chicken Chili w/ 2.5 lbs. Chicken

A spicy white chicken chili w/ extra chicken for protein.
Ingredients
- 4 cups Chicken Broth, Reduced Sodium
- 2 1/2 cups Hominy
- 2 1/2 lb Boneless, Skinless Chicken Breast
- 2 tbsp Vegetable Oil
- 1 cup Onions
- 1 1/2 cups Anaheim Pepper
- 1 Jalapeno Pepper
- 3 cloves Garlic Clove
- 2 tsp Cumin Seed
- 1/8 cup All Purpose Flour
- 2 tbsp Lime Juice
- 2 tbsp Cilantro
Directions
Boil Hominy and Broth in sauce pan. Brown chicken in dutch oven w/ 1T of oil, remove. Process veggies in chopper until minced then saute in Dutch oven w/ 1T of oil (7 minutes) Stir in cumin then in 30 seconds add flour. After 1 minute add broth mixture, put in chicken and put on low for 12 minutes, covered. Uncover, pull out chicken and shred while still simmering chili. Add back chicken and lime and cilantro. Serve. Makes 6 cups of Chili
