Ingredients
- 4 egg
- 1/2 tsp Salt
- 1/4 tsp Spices, Cayenne Pepper
- 4 Whole Wheat Soft Tortilla, Low Carb, Low Fat
- 1 tbsp Pure Canola Oil
- 1/2 medium Red Bell Pepper, Raw
- 2 tbsp Scallion Cream Cheese
- 1 Jalapeno Pepper
- 1/2 tsp Tabasco Pepper Sauce
- 1/4 cup Medium Salsa
- 4 tbsp Sharp Cheddar Shredded Cheese
Directions
* Whisk eggs, flax, salt and cayenne together in a bowl.
* Wrap 4 tortillas in a clean dish towel, sprinkle a little water on top, microwave for 1 minute keep wrapped to keep warm.
* Add oil, chopped red pepper, scallion whites and jalapeo to skillet.
* Cook until vegetables are softened, about 3 minutes.
* Add eggs and continue to cook, stirring, until eggs are set, about 2 minutes.
* Place tortillas on plates. Divide eggs between tortillas, top with 1 tbsp of cheese each, season with hot sauce and gently roll up.
* Serve with salsa and scallion greens.
