Autumn Kimchi Slaw

Autumn Kimchi Slaw

Fire up the grill and pair delicious marinated chicken or burgers with this fall-inspired kimchi slaw. You can even add the slaw inside your burger.

INGREDIENTS

SERVES 4

  • 2 cups raw red cabbage
  • 1 cup Carrots
  • 1/2 cup Green Onion
  • 1/2 medium granny smith apple
  • 1/4 cup Kimchi
  • 1/4 cup Peanuts, valencia, oil-roasted, without salt
  • 1/4 cup Oil, avocado
  • 1 tbsp Soy sauce made from soy (tamari)
  • 1/2 tsp Sesame Oil
  • 2 tbsp Raw Honey

DIRECTIONS

1 In a large mixing bowl, combine cabbage, carrots, onion and apple. Lightly toss to mix.
2 Chop kimchi to preferred consistency and toss with the veggie mixture.
3 In a separate bowl, whisk together oils, 1/4 cup kimchi juice, soy sauce and honey. Drizzle over veggie mixture and toss until well coated.
4 Add in crushed peanuts. Serve chilled with your favorite burgers, barbecue and more!
5 Notes:
6 If you’d like to obtain the best flavor, let the slaw sit overnight.
