Fire up the grill and pair delicious marinated chicken or burgers with this fall-inspired kimchi slaw. You can even add the slaw inside your burger.

Ingredients

  • 2 cups raw red cabbage, shredded
  • 1 cup Carrots, shredded
  • 1/2 cup Green Onion, chopped
  • 1/2 medium granny smith apple, chopped
  • 1/4 cup Kimchi
  • 1/4 cup Peanuts, valencia, oil-roasted, without salt, chopped
  • 1/4 cup Oil, avocado
  • 1 tbsp Soy sauce made from soy (tamari)
  • 1/2 tsp Sesame Oil
  • 2 tbsp Raw Honey

Directions

1. In a large mixing bowl, combine cabbage, carrots, onion and apple. Lightly toss to mix.
2. Chop kimchi to preferred consistency and toss with the veggie mixture.
3. In a separate bowl, whisk together oils, 1/4 cup kimchi juice, soy sauce and honey. Drizzle over veggie mixture and toss until well coated.
4. Add in crushed peanuts. Serve chilled with your favorite burgers, barbecue and more!

Notes:
If you’d like to obtain the best flavor, let the slaw sit overnight.
