Avocado and Tomato English Muffin

Replacing cream cheese with mashed avocado and substituting a whole-grain English muffin for a bagel, gives you a delicious, nutrient-dense breakfast with staying power.

INGREDIENTS

SERVES 1

  • 1 Whole Grain English Muffins
  • 1/2 medium avocado
  • 1/2 tsp Pure Lemon Juice
  • 2 slice of Tomato
  • 1 dash salt and pepper

DIRECTIONS

1 Toast English muffin. While muffin is toasting, mash the half avocado with lemon juice.
2 Once toasted, top each English muffin half with avocado and place a tomato slice on top. Sprinkle with a dash of salt and pepper.
