I love these because they're low in calories but have a really strong, meaty taste. They're great as a side or stuffing in other vegetables, dumplings, or empanadas.
Ingredients
- 16 oz Baby Bella Mushrooms
- 8 oz Mushrooms, White Button, Raw
- 4 1/2 oz Shitake Mushrooms
- 5 pieces Dried Porcini Mushrooms
- 2 tbsp Olive Oil
- 6 clove Garlic
- 1 1/2 tsp Kosher Salt
- 1/2 tsp Ground Black Pepper
Directions
Dice all the mushrooms (yes, all of them--it gets boring but it's worth it). Reconstitute the porcinis, and then dice them too. Saute the mushrooms in the oil with salt and pepper over low heat until they lose and begin to soak back up their water. Add the garlic when all of the mushrooms are slick and browning, and cook for another ten minutes, stirring frequently.
