Baked Banana Bread Oatmeal

This banana-infused oatmeal uses two types of bananas: mashed bananas for sweetness throughout and spiced caramelized banana slices for pops of flavor. Chopped walnuts provide crunch, omega-3 fatty acids and antioxidants. You’ll get a meal loaded with beneficial potassium -- a mineral that nourishes your muscles and supports cardiovascular health.

INGREDIENTS

SERVES 6

  • 3 Banana, large
  • 1 1/2 cups Rolled Oats
  • 1/4 cup Coconut Sugar
  • 2 oz Walnuts, Chopped
  • 1 tbsp Coconut Oil
  • 2 tbsp Cacao Nibs
  • 1 tbsp Cinnamon, Ground
  • 1/2 tsp Allspice, Ground
  • 1 tsp Spices, cardamom

DIRECTIONS

1 Preheat the oven to 350 degrees Fahrenheit.
2 Chop 2 bananas into 1/2-inch slices. Lightly coat the slices in melted coconut oil in a small mixing bowl. 3. Add the allspice, cardamom, ½ Tbsp of cinnamon, and coconut sugar, and stir to coat the slices.
3 Heat the slices to a non-stick pan over medium heat until they start to brown, 5-6 minutes. Remove from heat and set aside.
4 Mash the remaining banana with a fork in a mixing bowl.
5 Add the almond milk, the remaining ½ Tbsp. cinnamon and whisk to combine.
6 Pour in the rolled oats and walnuts, and stir until just combined.
7 Transfer the mixture to a greased casserole dish or dutch oven, then arrange the caramelized banana slices on top.
8 Bake for 40 minutes, then serve immediately.
