Baked Potato Pizzas

A different way to eat baked potatoes. Filling & nutritious.
Ingredients
- 1 Baked Potato, Medium
- 10 g Bell Pepper, Red
- 10 g Orange Bell Pepper
- 10 g Onions, Spring Or Scallions
- 1/2 tbsp Extra Light Olive Oil
- 10 g Original Sweetniblets Sweetcorn
- 1/2 Tomatoes
- 10 g Light Spread
- 30 g Healthy Living Mature Grated Cheese
Directions
1. Bake the potatoes in the usual way – for speed, cook them in the microwave for 10 minutes before finishing them off in the oven. Once done, carefully scoop out the inside of each potato and put aside.
2. Finely chop and fry the pepper, onions, sweetcorn & herbs in a little oil.
3. Put the potato in a bowl and mash it a little with a fork. Add the pepper, onion, sweetcorn and herbs along with the butter, tomatoes and half of the grated cheese.
4. Stuff the potato skins with the filling, top with the remainder of the grated cheese.
5. Bake in a moderate oven (180 °C – Gas Mark 4) for around 20 minutes until the pizza potatoes are warmed through and the cheese is brown and bubbly.
