Try this simple side for a healthy twist on the traditional baked potato with sour cream. Lime and cilantro brighten up the yogurt topping and perfectly complement the earthy deliciousness of the sweet potato.

Directions

1. Preheat oven to 400 degrees Fahrenheit.
2. Pierce the sweet potato with a fork 6 to 7 times. Bake on a baking sheet for 45 to 60 minutes, or until the flesh is tender.
3. Stir the Greek yogurt, lime juice, lime zest and cilantro in a small mixing bowl until combined.
4. Cut the sweet potato lengthwise, top with the yogurt, garnish with cilantro, then serve immediately.
