Craving Mexican food? Guacamole pairs beautifully with sweet potato in this easy-to-make recipe. It features just six ingredients.

Directions

1. Preheat the oven to 400 degrees Fahrenheit.

2. After washing, pierce the sweet potato skins with a fork 6 to 7 times.

3. Bake the sweet potatoes on a baking sheet for 45 to 60 minutes, until the flesh is

tender.

4. Mix the avocado, tomato, cilantro, red onion, lime juice and salt and pepper in a

mixing bowl and set aside.

5. Slice the sweet potatoes in half lengthwise, and top each with ¼ cup of the

guacamole mixture. Garnish with additional cilantro, if desired, and serve

immediately.

Notes:
Adjust the salt and pepper to taste.
