1. Heat a skillet over medium heat and add the oil.
2. Add the onions and carrots, sauté for a minute or two.
3. Add the water.
4. Mix in the curry paste.
5. Add the chicken and tamari, then place a lid on the pan and cook for five minutes
6. Stir in the rice and eggs.
7. Continue cooking until both the chicken and eggs are cooked through and the liquid is absorbed.
