Balsamic Glazed Brussels Sprouts with Garlic

These Brussels sprouts are roasted until browned and just cooked through. What they’re roasted with -- garlic, olive oil, balsamic vinegar, sea salt and freshly ground black pepper -- takes the flavor to the next level. Recipe and image courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 4

  • 3 garlic clove
  • 2 tbsp extra-virgin olive oil
  • 1 1/2 lb Brussels sprouts
  • 1/4 cup low-sodium vegetable broth
  • 1 tbsp Balsamic Vinegar
  • 3/4 tsp sea salt
  • 1/4 tsp ground black pepper

DIRECTIONS

1 Preheat the oven to 400°F.
2 In a small bowl, stir together the garlic and 1/2 tablespoon of the olive oil. Set aside.
3 In a large bowl, gently toss together the Brussels sprouts, broth, vinegar, salt, pepper, and remaining 1 1/2 tablespoons olive oil. Transfer the Brussels sprouts and broth mixture to a 9- x 13-inch baking dish.
4 Roast for 25 minutes. Stir in the garlic-oil mixture and roast until the Brussels sprouts are crisp yet tender, about 15 minutes more, stirring once. (Note: If necessary, splash with extra broth if liquids fully evaporate before the end of roasting.) Adjust seasoning and serve.
