Banana Applesauce Muffins

These muffins have just the right amount of sweetness and make a light but filling snack. Applesauce has been substituted for butter and Granualted Splenda for sugar. Instead of chocolate chips, I used 7 boxes of fun size Nestle Smarties that I had left over from Halloween. If you use Smarties, be sure to add them last and fold in carefully as the dough will take away their color. If you prefer chocolate chips, use about a 1/4 cup semi-sweet chips.
Ingredients
- 2 Banana-medium
- 1 Large Egg
- 1/2 cup Unsweetened applesauce
- 2/3 cup Granulated Splenda
- 1 cup 100% Whole Grain Whole Wheat Flour
- 1 cup All-purpose White Flour
- 1/4 cup 1% Milk
- 1 tsp Pure Vanilla Extract
- 2 tsp Magic Baking Powder
- 7 box Mini Smarties
Directions
Preheat oven to 350 degrees. Mix together all ingredients in a large bowl, folding Smarties carefully in last. Dough will be thick. Pour into greased muffin tins or papers, filling halfway. Bake for 20 minutes or until a toothpick pulls out clean. Makes 16 muffins.
