Banana Cranberry Chocolate Chip Bread
Ingredients
- 2 cups Cranberries (whole, Raw)
- 5 medium Bananas
- 2 cups White Whole Wheat Flour
- 2 cups All-Purpose Enriched, Bleached, Presifted Flour
- 1 tsp Pure Vanilla Extract
- 1 tsp All Purpose Baking Soda
- 1 tsp Baking Powder
- 1 1/2 cups Granulated White Sugar, 1 Cup
- 3 Egg, Large
- 1/2 cup Friendly Farms, Fat Free Skim Milk, Aldi
- 3 tsp Cinnamon Plus Spice Blend
- 1 tbsp Nutmeg, Ground
- 10 tbsp Semi-Sweet Mini Chocolate Chip Morsels
- 8 tbsp Buttery Spread With Flax Oil
Directions
1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees F (175 degrees C). Lightly grease or spray with cooking spray two 9x5 inch loaf pans.
In a large bowl, cream together the sugar and shortening until light and fluffy. Beat in eggs, and mix in bananas, milk, and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg. Gradually blend flour mixture into the banana mixture. Fold in cranberries, chocolate chips & walnuts. Pour into the prepared loaf pans.
Bake for 45 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely.
