Banana-nut cottage cheese griddlecakes

Ingredients

Directions

1. Mash the banana well with a fork in a bowl.

2. Add the oil, honey, milk and cheese to the bowl and mix well.

3. Beat in the eggs, then stir in flour and baking powder and beat to a smooth, thick batter.

3. Stir in the walnuts.

4. Spray or grease a griddle or heavy skillet and heat until very hot.

5. Drop tablespoonfuls of the batter onto the hot surface.

6. Cook for 1 minute until just set, then turn over and cook for a further 1 minute.

7. Turn over again and continue cooking until the griddle cakes are set and golden in color.

8. Transfer to a plate and cover to keep warm while cooking the rest.

9. Serve hot with syrup, fruit, or powdered sugar.
