1. In a large saucepan, fully heat the oil over medium. (Note: If you like, vary the type of oil used to best match flavor of toppings or personal preference.)

2. Once hot, add the popcorn, cover with a lid, and shake the pan to fully coat the kernels with oil. Continue shaking routinely until you begin to hear popping.

3. Let the popcorn pop without shaking the pan until popping stops, about 3 minutes.

4. Remove from heat and immediately toss with toppings of choice. For best results, toss popcorn with toppings in the hot saucepan rather than a mixing bowl. (Note: If you have leftovers, consider re-crisping it by placing the leftover popcorn in a skillet over medium and cook while stirring until toasty.)
