Beef Bourguinon in the Crock Pot

Ingredients
- 4 slice Turkey Bacon
- 16 oz Beef Stew Meat
- 1 tsp Salt*
- 1/2 tsp Black Pepper
- 2/3 tbsp 100% Italian Extra Virgin Olive Oil
- 2 medium Russet Potato
- 1 tbsp Onion Powder
- 6 oz Carrots, Baby Cut
- 3/4 cup Mushrooms
- 1/2 medium Red Bell Pepper, Raw
- 1/4 cup Unbleached All-Purpose Flour
- 14 oz Tomatoes Diced, Canned
- 2 cups Beef Broth
- 4 oz Pinot Noir
- 2 tsp Minced Garlic
- 2/3 tbsp Rosemary, Dried
- 2 tsp Basil, Dried
- 3/4 g Spices, Whole Bay Leaves
Directions
1) Brown bacon in a large skillet until crispy, about 10 minutes. Remove with a slotted spoon and set aside. Combine flour, salt, pepper, and stew meat in a gallon-size plastic bag and shake until coated. Brown meat in the bacon grease, adding more oil if necessary (you may have to do this in 2 batches).
2) Place vegetables, stew meat, and bacon into a 6-quart slow cooker. Over the top, pour diced tomatoes, beef broth, and wine. Sprinkle with remaining ingredients.
3) Cook on low for 8 hours. Take bay leaves out before serving.
