Beef with broccoli can be a really great way to fill up on protein while still getting lots of the green stuff! Serve this over noodles or rice - noodles and rice NOT included in the recipe.
Ingredients
- 2 tbsp Soy Sauce Lite
- 2 tbsp Light Italian
- 1 tsp Pure Corn Starch
- 2 cloves Garlic Clove
- 1 tsp Ground Ginger
- 1 lb Top Round Steak
- 1/2 cup Lower Sodium Beef Broth
- 1/2 cup Onions, Green
- 1 lb Broccoli
Directions
Cut round steak into thin strips. Prepare marinade by combining soy sauce, Italian dressing, cornstarch, garlic and ginger. Marinate beef for at least 15 minutes.
If you plan to serve over noodles or rice, prepare now. Rice or noodles cooked using water seasoned with several beef bouillon cubes ties in nicely.
Heat large non-stick skillet over medium-high heat. Remove beef from marinade with a slotted spoon, and place in the hot skillet. Discard marinate. Cook beef, stirring constantly for 2-3 minutes, or until mostly browned. Stir in the beef broth and green onions and reduce heat to medium low, cover and simmer for about 5 minutes. Remove lid, add broccoli, and cook until broccoli is bright green and tender but still crisp.
Serve over rice or noodles.
