Small but mighty, pomegranate seeds help fight cancer, high blood pressure, high cholesterol and inflammation. The seeds provide a beautiful contrast alongside crisp baby greens topped with a light drizzle of orange-ginger vinaigrette. And if you’re extracting pomegranate seeds from the fruit, remember to wear an apron to avoid staining your clothes.

Ingredients

Directions

1. Place salad greens on each plate.
2. Lay slices of beef and celery on top of the greens.
3. Sprinkle pomegranate seeds on top.
4. Mix the juice from the oranges with the vinegar and oil and then grate in zest from one of the oranges.
5. Add the ginger and sea salt and mix well.
6. Dress each salad lightly with the dressing.
