Beef and Pomegranate Salad With Orange-Ginger Vinaigrette

Small but mighty, pomegranate seeds help fight cancer, high blood pressure, high cholesterol and inflammation. The seeds provide a beautiful contrast alongside crisp baby greens topped with a light drizzle of orange-ginger vinaigrette. And if you’re extracting pomegranate seeds from the fruit, remember to wear an apron to avoid staining your clothes.

INGREDIENTS

SERVES 4

  • 3/4 cup Pomegranate Arils
  • 1 lb cooked beef tenderloin
  • 4 cups Salad Greens Kale Medley
  • 6 stalk , medium celery
  • 2 fruit orange
  • 1/4 cup Olive Oil, Extra Virgin
  • 1/2 tsp Ginger Juice, Naturally Pressed Original
  • 2 tbsp Apple Cider Vinegar
  • 1/4 tsp Sea Salt

DIRECTIONS

1 Place salad greens on each plate.
2 Lay slices of beef and celery on top of the greens.
3 Sprinkle pomegranate seeds on top.
4 Mix the juice from the oranges with the vinegar and oil and then grate in zest from one of the oranges.
5 Add the ginger and sea salt and mix well.
6 Dress each salad lightly with the dressing.
