Beets provide essential minerals like potassium, which promotes healthy nerve and muscle function. Pair it with raw fennel for a festively green-and-red salad that bursts with antioxidants. To make the dressing, combine maple syrup with mustard, apple cider vinegar and tamari.

INGREDIENTS

SERVES 4

  • 8 Baby Beets
  • 1 cup Fennel, bulb, raw
  • 1 tbsp Maple Syrup
  • 1/2 tbsp Yellow Mustard
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 tsp Tamari Soy Sauce
  • 1 tsp Apple Cider Vinegar
  • 1/2 cup Water, tap, well

DIRECTIONS

1 Cut the beets into quarters.
2 Place the water in a pot with the beets and bring to a boil.
3 Turn the heat to low and with a lid on the pot, simmer for 10 minutes.
4 Mix the beets and fennel together in a bowl.
5 Whisk the maple syrup, mustard, oil, vinegar, and tamari together and then toss with the vegetables.
