Directions

1. Cut the beets into quarters.
2. Place the water in a pot with the beets and bring to a boil.
3. Turn the heat to low and with a lid on the pot, simmer for 10 minutes.
4. Mix the beets and fennel together in a bowl.
5. Whisk the maple syrup, mustard, oil, vinegar, and tamari together and then toss with the vegetables.
